The Ginger Mojito

This mojito recipe pumps up the mint and brings a delightfully crisp finish to a summertime favorite! Have plenty of mint handy, because you'll mix up a LOT of these this weekend!

Oh, how I love a mojito. That vibrant mint flavor and color, the tropical taste of rum, and that kick of lime, making it one of the most refreshing cocktails on the planet. My favorite mojitos are those where the mint really shines through - which can be difficult to achieve even when you have a large handful of mint to add. That's why I add my secret ingredient.
Mint simple syrup and diet ginger ale make this one of the most refreshing versions of a mojito you'll find.
Mint simple syrup - made with PLENTY of mint to capture that flavor - elevates the flavor in the cocktail without overwhelming it with lots of muddled leaves and leaf parts. Plus, I like to use diet ginger ale instead of club soda to give it a light snap. It makes this cocktail literally pop with flavor!

The Ginger Mojito
Ingredients (makes 1 cocktail)
1 - 1.5 oz quality rum (silver preferred)
1 Tbsp mint simple syrup (see recipe below)
Juice of 1/2 of a lime
4 oz diet ginger ale
Garnish: a sprig or two of mint and slice/wheel of lime
Mix it Up
Add the rum, juice of the 1/2 lime, and the simple syrup to a highball glass. Mix well with a cocktail spoon.
Once combined, gently fill the glass with ice.
Pour the diet ginger ale over the ice. Mix all ingredients again with the cocktail spoon.
Garnish with a sprig of mint and lime wheel.

Mint Simple Syrup
Add 1 c of water and 1 c of sugar to a saucepan.
Bring to a slow simmer and stir until the sugar is completely dissolved; remove the saucepan from the heat.
Add about 12- 15 healthy sprigs of mint (about 1 c) to the pan, and gently stir into the syrup.
Let the leaves steep about 30 minutes. Afterwards, strain the syrup into a sterilized glass jar or container. Store in the refrigerator.
Note: recipe can also be used for other herbal syrups, such as sage, rosemary or lavender - all fantastic in cocktails!
