Chill for the Summer - Cool Gazpacho Dip
This dip takes the heat off of summer, with cool, smooth ingredients and fresh flavor.

I make this at least a couple of times each summer for parties. It's a crowd-pleaser, easy to mix up, and so delicious! the cucumber and tomato on top brighten up this dip - sometimes I add a little extra.
This Cool Gazpacho Dip will go fast - get it before it's gone!
This is a recipe adapted The Pampered Chef's Recipes from the Heart Cookbook (1997), and it's stood the test of time. Make this for your next outdoor party, or bring it when you're invited to a backyard cookout - you'll be invited back again!
I've added some additional suggestions - feel free to add your own twist on it!
Cool Gazpacho Dip
Ingredients (serves 12)
1 packages (8 oz) cream cheese, softened
1/2 cup (2 oz) shredded cheddar cheese
1/4 cup sour cream
2 tablespoons minced fresh cilantro
1 garlic clove, pressed
1 small tomato, seeded and chopped
2 green onions, sliced
1/3 c chopped cucumber
Baked pita chips, pita triangles or naan
Mix it Up
In a medium bowl, combine cream cheese and sour cream; mix well.
Stir in cheddar cheese, cilantro and garlic.
Cover; chill 2 - 3 hours for flavors to blend.
Transfer to an 8- or 9- inch pie plate just before serving
Top with tomato, onion and cucumber. Serve with pita chips, pita triangles or naan.
Note: to add more texture to the dip, add a 1/2 cup of garbanzo beans to the top.
Consider a lemon drop as the perfect cocktail to serve along with this cool dip!
