Pink Grapefruit Sorbet

This scrumptious, sweet and tart pink grapefruit orbet is a showstopper for desserts and cocktails. It's a summertime favorite that never disappoints!

I love this recipe for so many reasons. It's easy, it's a crowd-pleaser, and you cannot find it in stores, which makes it truly unique. It's also so versatile - this sorbet can be used as a simple after-dinner dessert, as a frosty treat in cocktails, and as a way to give brunch mimosas extra pizzazz. And let's not forget, it's also vegan (which is important in our house)!
This pink grapefruit sorbet only has 4 ingredients, but wow, does it deliver on sweet citrus taste!
Most of us have ice cream makers that rarely, if ever, see the light of day. So consider this your reason to bring it up from the basement and make a treat sure to be a hit with family and friends! After you make it the first time, you'll find yourself going back to make it time and again.

Pink Grapefruit Sorbet
If using an ice cream maker, review its usage instructions - many require you to place the freezing component in the freezer at least 24 hours prior to using.
Ingredients (serves 8)
1/4 c sugar
1/4 c water
2 c fresh grapefruit juice (I highly reco fresh-squeezed)
3 tbsp fresh lemon juice (again, fresh-squeezed)
1 tbsp grapefruit zest
How to Make
Combine the grapefruit zest, sugar and water in a medium saucepan; simmer over medium-high heat until the sugar is fully dissolved.
Stir in the grapefruit and lemon juices.* Let it cool, and them move to the refrigerator to chill for 2 hours.
Set up your ice cream maker, ensuring the freezer bowl is thoroughly frozen (it should be in the freezer at least 24 hours).
Pour the sorbet mixture into the ice cream maker, turn on, and have it process the mixture until it is thick and frozen. (This will take several minutes).
Once frozen, place the contents in a freezer-safe container and let it freezer for several more hours until it's firm.
*some recipes may recommend adding a drop or two of red or pink food coloring to enhance the color. I skip this step, but it's an option if you want a more vibrant sorbet.
Scoop and enjoy this tart, but sweet summertime treat!
Ways to use Pink Grapefruit Sorbet
Outside of simply serving in a bowl or in a cone, a few of my favorite ways to use this sorbet:
Use a melon baller to make small scoops of the sorbet; add to Proscecco or Champagne at brunch, or serve as an after-dinner dessert drink.
Make a gin and cucumber-lime tonic; add a small scoop of sorbet to the cocktail. Garnish with cucumber or a sage leaf
Layer pink grapefruit sorbet, lime sorbet, and lemon sorbet in glass coupe glasses or clear glass bowls for a lovely three-tiered ice cream treat. Sprinkle with crumbled waffle cones or graham crackers.
