Mission Fig Simple Syrup
Ingredients
8 oz dried mission figs, coarsely chopped
8 oz water
8 oz granulated sugar
1 TBL lemon juice
1 tsp vanilla
Mix it Up
Combine all ingredients in a medium saucepan and bring to a simmer over medium heat until sugar is completely dissolved. Continue to simmer for 10 minutes. Afterwards, remove from heat and steep the figs for 20 minutes.
Strain the mixture using a fine mesh strainer into a bowl. Reserve the figs.*
Return the strained liquid to the saucepan, and place it over medium heat to simmer, reducing the liquid. Don't walk away from the pan, and regularly stir. This may take about 15 minutes. Ideally, you'll reduce the syrup to about 2/3 cup.
Remove from heat, cool slightly, and then add to an airtight container. Store in the refrigerator for about 2 weeks.
*Don't throw away the figs! Add to a small food processor or use an immersion blender to make a fig spread, perfect for soft cheeses, roasted meats and even vegetables.
