How many different Bananas Foster cocktail recipes exist? Too many, IMHO. I did quite a bit of research on this one - including many taste tests (this job is hard!) - and the challenge I continued to encounter: how do I capture that rich, caramel-y texture and flavor in a cocktail? The recipes I tried were too 'booze-forward,' or simply lacked depth. Until I dialed it up with 2 ingredients: butterscotch schnapps and mission fig simple syrup.
The butterscotch schnapps and mission fig simple syrup were the true differentiators in bringing the Bananas Foster flavor to life.
Mixing this scrumptious cocktail is easy, and will definitely be a crowd pleaser. Don't skip the caramelized bananas! That's what brings that banana profile home. Serve this cocktail with a simple side like vanilla bean ice cream or pound cake, and you have a dessert course truly out of this world!

Bananas Foster Cocktail
Ingredients (makes 1 cocktail)
2 oz Banana liqueur
1 oz dark rum
1 oz butterscotch schnapps
1 oz heavy whipping cream
1 oz mission fig simple syrup (click for recipe)
2 - 3 dashes cinnamon
Caramelized banana slices (2 - 3)
Garnish: whipped cream, caramel sauce
Mix it Up
Prepare your bananas garnish; slice banana slices and lay flat on a plate or baking sheet. Sprinkle generously with granulated sugar. *Using a brùlèe torch, apply the flame directly to the sugar until it's bubbly and dark brown (do not burn). Set aside to cool. (Alternate option below.)
Add ice to your cocktail shaker. Add the banana liqueur, dark rum, butterscotch schnapps, whipping cream, fig simple syrup, and cinnamon. Shake very well until chilled through, about 30 seconds. Pour into a martini glass.
Add 2 - 3 of the banana slices to a skewer, and add to the glass.
Alternative: After pouring the cocktail in the martini glass, finish with whipped cream and drizzle with caramel sauce. Then add the bananas skewer to the glass and serve.
*If you don't have a brùlèe torch, line a baking sheet with aluminum foil. Place the sliced bananas on the baking sheet and sprinkle generously with sugar. Place in the oven under broil for 3 - 4 minutes. Watch closely, and remove when the sugar is bubbly and dark brown.
