Oktoberfest Nachos

Oktoberfest may be one of my favorite times of the year. I love all the German food, pastries, and yes - beer! And NO one does it quite like Cincinnati. Oktoberfest has it's own traditional, unique flavors - so why not combine them all into a tasty appetizer everyone will love? May I present to you: Oktoberfest Nachos.

These nachos combine everything that's delicious about Oktoberfest - beer brats, sauerkraut, peppers and cheese. I love how these nachos are so comparable to your traditional nacho dishes - they incorporate a meat, some grilled veggies and yummy cheese. Provide sides of mustard and more beer cheese (can you ever get enough?) and you easily punch up the flavor.


These Oktoberfest nachos really hit the spot during an Oktoberfest party, football tailgate or bonfire party.

We're lucky enough to have any amazing bakery in our area that makes the BEST beer cheese! But if you can't find the 'good stuff' in stores, there's also a recipe below for a simple, delicious beer cheese recipe. Prost!

Oktoberfest Nachos


Ingredients (serves 8 - 10)

  • One bag of Pretzel crisps (flat pretzels); you'll use about 1/2 of the bag.

  • 6 German-style or beer brats, uncooked

  • 2 c sauerkraut, drained and patted dry

  • 1 TBL olive oil

  • 1 green pepper

  • 1/2 yellow onion

  • 8 oz Sharp cheddar cheese, shredded

  • 2 c beer cheese

  • Garnishes: brown mustard or grain mustard, beer cheese, sour cream

Mix it Up


Prepare the nacho ingredients

  1. Make beer cheese, if needed. Store-bought is fine, but if you need a beer cheese recipe, you'll find an easy one below! Set aside.

  2. Grill the brats on the grill or in a skillet until browned and cooked through. Shred/dice the cooked brats until they resemble meat crumbles, removing the casing as much as possible. Drain well and set aside.

  3. Dice your pepper and onion into small, bit-sized pieces. Add 1 tablespoon of olive oil to a skillet, heat until shimmering, and then add the pepper and onion slices. Grill until all are cooked through and a bit browned. Remove from the skillet and set aside to cool.

  4. Drain your sauerkraut well; first add to a fine mesh strainer and press gently. Finish by spreading the sauerkraut on a paper towel to remove any remaining juice. Place in a bowl.


Assemble the nachos

  1. Heat your over to 350 degrees.

  2. In a 9 x 13 oven-safe dish, add a layer of pretzels to the dish, trying to minimize the space in between. (You may want to line your dish with parchment paper.)

    NOTE: Use a smaller dish for more 'loaded' nachos, or make 2 layers only.

  3. Add 1/3 of the brat crumbles. Then add 1/3 of the grilled peppers/onions, and finally, add 1/3 of the sauerkraut, spreading evenly.

  4. Sprinkle a layer of the shredded cheddar cheese.

  5. Repeat by adding another layer of the pretzels, then brat crumbles, grilled peppers/onions, sauerkraut, etc.

  6. Add the third layer, using all of the remaining ingredients.


Heat and Serve

  1. Place the nachos in the oven for 15 - 20 minutes - check that the cheese is completely melted, and browning a bit on the top.

  2. In the meantime, heat the beer cheese in a microwave so it's warm and pours easily.

  3. If, after 15 minutes the cheese isn't melted all the way through, BRIEFLY turn on the broiler to finish the nachos.

  4. Remove from the oven, and pour about a 1 cup of the beer cheese over the nachos.

    Note: you may also choose to serve the beer cheese on the side.

  5. Serve immediately, with the mustard, remaining beer cheese, sour cream and other condiments on the side.


Open a cold beer, dance to some polka music and nosh on these amazing nachos!


Easy Beer Cheese


Ingredients

  • 2 TBL butter

  • 3 TBL all-purpose flour

  • 1 c milk

  • 1/2 c beer of choice (I recommend an amber or Oktoberfest-style beer)

  • 1 1/2 c freshly grated cheddar cheese

  • 1/2 c freshly grated gruyere cheese

  • 1/4 tsp paprika

  • 1/4 tsp garlic, finely minced

  • 1/2 tsp dijon mustard


Mix It Up

  1. In a medium saucepan over medium heat, melt the butter. When it's melted, whisk in the flour, the milk and the beer. Do not boil!

  2. Add the cheeses and mix with the whisk until it's completely melted.

  3. Add the paprika, garlic and dijon mustard and heat until it's the desired consistency, then remove from heat.
